Bacon Potato Soup

This rich and comforting potato soup is packed with smoky bacon, sweet caramelized onions, and silky-smooth potatoes. Simmered in stock and blended to perfection, it's a hearty and warming dish, perfect for a cozy meal.
Ingredients
2 pounds (900 grams) potatoes, peeled and cut into large chunks
2 slices bacon, sliced
1 onion, thinly sliced
4–6 cups (950–1400 ml) stock or water (enough to cover potatoes)
Salt, to taste
White pepper, to taste
Instructions
Slice the bacon into small pieces and place in a medium pot over medium heat. Cook until the fat renders and the bacon becomes crispy.
Thinly slice the onion and add it to the pot with the bacon. Sauté until soft and lightly caramelized.
Peel and cut the potatoes into large chunks. Add them to the pot with the bacon and onions.
Pour in enough stock or water to fully cover the potatoes. Season with salt and white pepper.
Reduce heat to medium-low and simmer until the potatoes are tender, about 25–30 minutes. If the liquid reduces too much, add more as needed.
Once the potatoes are fully cooked, blend the soup on high speed until smooth. If the soup is too thick, add more stock or water while blending to reach the desired consistency.
Taste and adjust seasoning as needed.
Serving Suggestions
Top with grated cheddar, sour cream, and sliced green onions for extra richness and flavor.
Serve with crusty bread or buttered toast for a complete meal.
For a smoky kick, add a dash of smoked paprika or extra crispy bacon bits before serving.
Tip: If you prefer a chunkier texture, blend only half the soup and leave some potato pieces intact.
