Citrus-Ginger Vinaigrette

This bright and flavorful citrus-ginger vinaigrette is the perfect balance of tangy, sweet, and savory. Fresh orange juice and lemon zest add brightness, while Dijon mustard and ginger bring depth and warmth. Blended with avocado or sunflower oil, this silky-smooth dressing is perfect for drizzling over salads, shaved vegetables, or even as a marinade for grilled meats and seafood.


Ingredients

1 cup orange juice
Zest of 1 lemon
¼ cup sherry vinegar or white wine vinegar
¼ cup honey
1 tablespoon Dijon mustard
1 tablespoon fresh ginger (about 1 thumb-sized piece)
1 teaspoon salt
1½ cups avocado oil or sunflower oil


Instructions

Place all ingredients except for the oil in a blender. Blend on high speed until smooth. With the blender still running, slowly drizzle in the oil until the vinaigrette emulsifies and becomes creamy.

Use immediately or store in an airtight container in the refrigerator for up to one week. Shake well before using.

Drizzle over your favorite salad, toss with shaved vegetables, or use as a bright marinade for grilled chicken, seafood, or roasted vegetables.

Tip: For extra depth, try adding a pinch of ground turmeric or a splash of soy sauce for a more umami-rich flavor.
