These honey-roasted carrots with N’duja are a bold and flavorful twist on a classic side dish, combining the natural sweetness of roasted carrots with the spicy, smoky depth of N’duja. N’duja (en-DOO-yah) is a spreadable, spicy pork salumi from Calabria, Italy, made with pork, Calabrian chilies, and spices. Traditionally aged and cured, it has a rich, fiery kick and a silky, almost butter-like texture that melts beautifully into dishes. Here, it adds a smoky, savory contrast to the caramelized honey-roasted carrots, making for a side dish that is both simple and deeply complex.
Ingredients
1 pound carrots, peeled and cut into desired shape
3 ounces N’duja
2 ounces honey
Salt, to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the carrots by peeling and cutting them into uniform pieces. Toss them with a little olive oil and salt.
- Roast the carrots in the preheated oven for 20–25 minutes, or until they start to caramelize and become tender.
- Melt the N’duja in a small pan over low heat or in the microwave until soft and spreadable.
- Glaze the carrots by tossing them with the warm N’duja and honey, ensuring they are well coated.
- Return to the oven for another 5–7 minutes, allowing the flavors to meld and caramelize.
