Cheesy Baked Potato Casserole

This Cheesy Baked Potato Casserole is comfort food at its finest—crispy on the outside, creamy on the inside, and packed with the rich flavor of aged cheese. Made with just a handful of simple ingredients, it’s the perfect side dish for a cozy dinner or a satisfying main on its own. The combination of grated russet potatoes, sharp cheese, and heavy cream creates a golden, savory bake that's as easy to make as it is to love.

Ingredients:
2 pounds (about 900g) russet potatoes
6 oz (170g) cheddar or other cheese aged 5–6 months
8 oz (240ml) heavy cream
Salt, to taste
Black pepper, to taste

Instructions:
Preheat the oven to 400°F (200°C). Peel the potatoes and grate them using the large holes of a box grater or a food processor. Grate the cheese and set aside.

In a large bowl, combine the grated potatoes with the cheese and pour in the heavy cream. Season generously with salt and freshly ground black pepper, then mix thoroughly to evenly coat the potatoes.

Line a 10-inch (25cm) oven-safe skillet with parchment paper. Transfer the mixture into the skillet, pressing it down gently into an even layer.

Bake in the preheated oven for 45 minutes, or until the top is golden and the edges are crisp. Let it cool slightly before slicing and serving.
