Creamy Overwintered Spinach Dip with Bacon

When winter feels like it should be over, but spring hasn't quite kicked in yet, overwintered spinach helps hold you over. Naturally sweet, tender overwintered spinach—with its concentrated flavor and delicate texture—meets smoky bacon, golden onions, and just enough cream to turn it into the perfect spinach dip. It’s rich without being heavy, familiar yet elevated. Slather it over toasted sourdough, scoop it up with tortilla chips, or serve it beside a steak for a lush and savory side. Whether you're dipping, topping, or plating, this is the kind of dish that gives you incentive to eat your greens like Popeye, but with a whole lot more satisfaction.


Ingredients

2 strips bacon, thinly sliced
½ onion, diced
2 garlic cloves, minced
12 ounces spinach (preferably overwintered)
1 tablespoon flour
¼ cup (4 oz) heavy cream
¼ cup (4 oz) cream cheese
Salt and pepper, to taste


Instructions

In a large skillet over medium heat, cook the sliced bacon until crisp and fully rendered.

Add the diced onion and minced garlic to the pan with the bacon. Sauté until the onions are soft and lightly browned, about 3–5 minutes.

Sprinkle the flour into the pan and stir to soak up the bacon fat, forming a light roux.

Add the spinach and cook, stirring, until wilted and well combined with the aromatics.

Stir in the cream and cream cheese. Reduce heat to low and simmer for about 5 minutes, until thick and creamy.

Season to taste with salt and pepper. Serve warm.
