Pickled Beets w/ Wheat Berries, Fresh Herbs, Buffalo Mozzarella

This vibrant and beautifully balanced dish brings together the earthy sweetness of pickled beets, the hearty chew of wheatberries, fragrant fresh herbs, and the final burst of winter citrus. Topped with creamy buffalo mozzarella or feta, and finished with a drizzle of olive oil, this dish is as refreshing as it is satisfying.


Ingredients

2 cups large-diced pickled beets (click the link for our recipe)
1 cup cooked wheat berries
1 cara cara orange
1 ball buffalo mozzarella (or 4 ounces crumbled feta)
½ ounce mint, chopped
½ ounce parsley, chopped
Drizzle of olive oil
Salt, to taste


Instructions

  1. In a mixing bowl, combine the pickled beets, wheatberries, chopped mint, parsley, olive oil, and a pinch of salt. Toss gently to combine.
  2. If using buffalo mozzarella, slice and place at the bottom of your serving bowl. If using feta, simply crumble it over the top at the end.
  3. Spoon the wheatberry mixture into your bowl over the cheese.
  4. Supreme the cara cara orange by cutting away the peel and slicing the segments. Arrange the citrus supremes over the top.
  5. Finish with an extra drizzle of olive oil if desired. Serve and enjoy!
